Honey Chipotle Baked Cauliflower Bites

If I could eat chicken wings everyday, I most certainly would. They are crispy, full of flavor, extra saucy and pair well with ranch dressing. They are nearly the perfect food - minus the insane amount of calories. These Honey Chipotle Baked Cauliflower Bites can give you the satisfaction of chicken wings, while saving on the calorie intake for the day! These are extra crispy, super spicy, and the sauce is baked into the wings, so it won’t run all over your face and arms.

To make these even more health-conscious, you can substitute water or regular milk for the buttermilk. This recipe takes the heat to the next level. If that’s not your thing, or if you don’t have adobo peppers you can always make modifications. You can substitute more hot sauce for the adobo peppers. You can also skip making this sauce, and use your favorite barbecue sauce, mixed with a little milk or water. Opportunities are endless. Enjoy!

 

 

Ingredients

1 head of cauliflower

1 cup buttermilk

1 cup flour

1 tablespoon cornstarch

1 teaspoon salt

1 teaspoon pepper

1 tablespoon garlic powder

1 teaspoon cayenne pepper

1 tablespoon honey

2 tablespoons hot sauce

2 adobo peppers

Cook Time: 25 minutes

Total Time: 35 minutes

Recipe

  1. Preheat oven to 450 degrees

  2. Wash, and separate the head of cauliflower into florets

  3. In a medium bowl, whisk together 1 cup flour, 1 tablespoon cornstarch, 1 teaspoon salt, 1 teaspoon pepper, 1 tablespoon garlic powder and 1 teaspoon cayenne pepper. Set aside.

  4. In a food processor, pulse together 1 cup buttermilk, 1 tablespoon honey, 2 tablespoons hot sauce, and 2 adobo peppers with some of the sauce from the can. Pulse together until peppers are pureed.

  5. Add the wet ingredients into the dry ingredients and whisk together until batter is fully incorporated into itself

    .

  6. Then, individually coat each piece of cauliflower in the batter, removing any excess. Place a greased baking sheet with parchment paper or aluminum foil. Too much batter will lead to soggy cauliflower bites. Continue doing this until all pieces of cauliflower are coated.

  7. Bake in the oven for 20-25 minutes or until golden brown. Check for the last few minutes of bake time to ensure they are not burning. You can also turn the bites over midway through for even crispiness.

  8. Serve immediately! These would pair great with my ranch dressing!
