Chorizo Hash Breakfast Tacos
Tacos for breakfast is a dream. They are quick, fun and can be customized for each person. These Chorizo Hash Breakfast tacos bring together spicy chorizo, flavorful crispy potatoes, and fluffy scrambled eggs for a breakfast that will surely keep you energized until lunch.
Hash is simply potatoes mixed with some veggies and sometimes a protein. You can opt for frozen HASHbrowns (get it?) here, or cut up some potatoes on your own. Chorizo is a spicy pork blend that will give you a nice jolt of energy to start your day - you can substitute for sausage, or leave it out all together. Make these your own, and enjoy!
Ingredients
1/2 pound chorizo
3/4 pound creamer potatoes
1/2 medium onion, chopped
3 eggs
1 teaspoon oregano
1 teaspoon garlic powder
1 teaspoon chili powder
Fresh cilantro, chopped
Step 1: Gather all of your ingredients, and over medium heat, place a few tablespoons of oil into a skillet.
Step 2: Cut your creamer potatoes in half, and then in quarters.
Step 3: Season the potatoes with 1 teaspoon oregano, 1 teaspoon garlic powder and 1 teaspoon chili powder. Cook until potatoes begin to get tender - about 10 to 15 minutes.
Step 4: When potatoes are beginning to soften, add in your diced onion. Continue to cook until onions start to caramelize - about 10 minutes. When this happens, add in chorizo. Break up your chorizo, stirring often. Your hash will start to brown, and begin to stick to the pan. Be sure to stir
Step 5: While chorizo is cooking, make scrambled eggs. Mix together eggs, a touch of cream, some salt pepper and garlic powder. When scrambled eggs are done, layer all ingredients into your tacos.
