Baked Chicken Taquitos with Spicy Adobo Crema

We all love tortillas. Taquitos are basically rolled tacos that are crunchy, so there is nothing not to like here. These are extra versatile. Any of the ingredients can be taken out of this recipe, and you can add any of your favorite taco toppings into the filling mixture. I love as many sauces as possible with any meal. The spicy adobo crema is a refreshing partner to the heaviness of the filling. This is a crowd-pleaser. Enjoy!

 
 

 
 

Ingredients

Adobo Crema

4 ounces sour cream

2 tablespoons adobo sauce

1 teaspoon garlic powder

Juice from half of a lime

Salt & Pepper

1 teaspoon dried basil

Taquitos

Flour or Corn Tortillas

1 pound ground chicken, beef or turkey

1 medium, finely chopped onion

1 tablespoon minced garlic

1 can black beans, drained

2 tablespoons chili powder

1 tablespoon garlic powder

1 tablespoon cumin

1/2 tablespoon onion powder

1/2 cup water

Shredded Cheese

Cooking Time: 25 minutes

Total Time: 45 minutes

Recipe

  1. In a small bowl, combine all of the ingredients for the Adobo Crema. Whisk together until fully incorporated. Cover and let sit in the refrigerator for at least an hour before using. (Tip: If you want this extra spicy, you can add more of the liquid from the can, or you can blend all ingredients together in a food processor, and add one of the adobo peppers).

  2. Preheat oven to 425 degrees.

  3. In a pot, heat about two tablespoons of oil. Finely chop a medium onion (red, yellow or white will do!), and place in pot to begin sweating. About 3 minutes. Then, add garlic.

  4. To the pot, add your ground meat of choice and season with salt and pepper. Stir until crumbled and cooked through.

  5. Once meat is cooked, add 1 can drained black beans, 2 tablespoons chili powder, 1 tablespoon garlic powder, 1 tablespoon cumin and 1/2 tablespoon onion powder. (If you have a favorite packaged taco meat seasoning, you can use that too!). Add a little bit of water at a time until the seasonings stop clumping together. Remove from heat.

  6. Warm tortillas. This will help prevent ripping while preparing and in the cooking process.

  7. Begin building taquitos. On both sides of the tortilla, rub with olive oil to prevent burning. Then, fill with the desired amount of meat filling. Top with cheese, and roll tightly!

  8. Place on a baking sheet and continue making taquitos. Once complete, place in oven for 8 minutes. Once done, flip taquitos over and place back in the oven for an additional 8-10 minutes. Watch carefully.

  9. Top with shredded onion and cilantro, and serve warm with the Adobo Crema!
