Quick Pot-Sticker Soup
Potstickers, dumplings, wontons - all generally the same thing - and they make the perfect ingredient for this dish! This will be the simplest, and fastest soup you’ll likely ever make. It’s the perfect weeknight dinner - it’s quick, it’s healthy, it’s so versatile, and it’ll make a great lunch for the next day! Grab your favorite frozen potstickers, lots of fresh veggies, some broth, and you’ve got yourself a hearty and delicious meal.
Ingredients
8 ounces of your favorite frozen potstickers
6 cups vegetable broth
1 bunch scallions, roughly chopped
1 tablespoon sesame oil
1 tablespoon rice wine vinegar
2 tablespoons soy sauce
1 cup match-stick carrots
Sesame Seeds and Chili Oil for garnish
A few handfuls of spinach
Cook Time: 20 Minutes

Recipe
Heat 1 tablespoon of sesame oil over medium heat in a deep pot. Thinly slice the white ends of the scallions, and place in sesame oil. Cook the onions until slightly charred.
Deglaze the bottom of your pan with 1 tablespoon of rice wine vinegar. Be sure to scrape up all of the brown bits. If you don’t have rice wine vinegar, you can use white vinegar, or a splash of wine.
Then, add in your 6 cups of broth and 2 tablespoons of soy sauce. Cover and bring to a boil.
Once boiling, add in your frozen pot stickers and simmer until cooked through - 3-4 minutes.
Add in your chopped scallions, carrots and spinach and cook for 1-2 minutes.
Top with sesame seeds and chili oil and serve!
