Zesty Black Bean Burgers

These Zesty Black Bean Burgers will make your next Meatless Monday something to talk about. Black bean burgers are nutritious, flavorful, and extra filling - and these ones will be the life of the party. There are so many different types of black beans burgers at the store - some with corn, some with rice, some with more veggies than black beans. For this recipe, the base is definitely black beans. The patties come out thick, and the edges get crispy in the oven. And, black beans need a lot of flavor - so be generous with your seasonings!

A while back I learned to dry out the black beans in the oven, before making your patties - this will help eliminate most of the moisture and help keep your burgers from becoming a sloppy mess. Trust me - I’ve had many sloppy, wet black bean burgers before - it’s quite embarrassing. You should make this recipe your own. Season as much or as little as you like, use your favorite veggies, and even your favorite types of beans. You could throw in some hot sauce into the mixture for a little moisture content, too! Mash the beans as much you want, or leave them in tact. Make it your own! Enjoy!

 

 

Ingredients

2 cans black beans, drained

3 ounces feta cheese

1 egg

1/3 cup bread crumbs

1/2 medium onion, diced

1 tablespoon garlic

1 small can green chilies

2 teaspoons Italian seasonings 

3 teaspoon chili powder

2 teaspoon cumin

1 teaspoon ground mustard

1/4 teaspoon paprika

Cook Time: 20 minutes

Total Time: 30 minutes

Recipe

  1. Preheat oven to 400 degrees.

  2. Drain two cans of black beans, and place on sheet pan lined with aluminum foil. Use a paper towel to pat the beans dry. Place in oven for 10-12 minutes.

  3. While beans are in the oven, sauté onion, garlic and green chilies together over medium heat. You want all the veggies to soften and the onions to become translucent.

  4. When beans are done, add to large mixing bowl and let cool.. Once cooled, mash about half of the beans.

  5. To the bowl with the beans, add in your sautéed veggies, 1 egg, 1/3 cup bread crumbs, 2 teaspoons Italian seasonings, 3 teaspoons chili powder, 2 teaspoons cumin, 1 teaspoon ground mustard, 1/4 teaspoon paprika and 3 ounces feta cheese. Mix everything together with a spatula, or your hands.

  6. Once combined, form mixture into four equal patties. Place on parchment paper and chill in the fridge for about 10 minutes.

  7. Remove from the refrigerator. Place on baking sheet lined with parchment paper and bake for 20 minutes - 10 minutes on each side.

  8. Serve with your favorite burger toppings!
