Cheesy Baked Gnocchi with Lemon Cream Sauce
I was on this Earth far too long before meeting gnocchi. I always say that potatoes are the most versatile food, and I think gnocchi proves that. Pasta made from potatoes is basically a dream come true. And, this cheesy baked gnocchi with lemon cream sauce is also a dream come true. It’s also a one pan meal - does it get any better?
The base of this dish is a rich lemon cream sauce. It’s decadent. Lots of seasonings, rich from the cream and a bit of freshness from the lemon juice. Add in the gnocchi and you get lovely flavorful little potato pillows of goodness. The broccoli is to make sure we all get our veggies. If you’re not a fan of baked broccoli you can leave it out, substitute it for some spinach and mushrooms, or throw in whatever you have. I have a feeling this ones going to be a crowd pleaser. Enjoy!
Ingredients
1 package gnocchi
5 tablespoons butter
1 small white onion. diced
1 tablespoon garlic
1/4 teaspoon paprika
1/8 teaspoon red pepper flakes
1 1/2 teaspoons Italian seasonings
2/3 cup heavy cream
1 cup stock
Broccoli Florets
1 - 1 1/2 cups parmesan cheese
Juice from 1/2 of a lemon

Recipe
Preheat oven to 425 degrees
Bring a pot of water to a boil for the gnocchi. When it comes to a boil, drop in the gnocchi, and cook for 1-3 minutes. Drain and set aside. Don’t overcook!
Begin making the lemon cream sauce. In a cast-iron skillet or another oven-proof pan, melt 5 tablespoons of butter. Once melted, add in your diced onions. Let the onions cook down until they begin to caramelize and then add in the garlic.
Add in 1/4 teaspoon paprika, 1/8 teaspoon red pepper flakes, 1 1/2 teaspoons Italian seasonings and stir until combined with the butter, onions, and garlic. Then, add in 1 cup stock, and 2/3 cup heavy cream. Whisk together, and then add in 1/2 cup of parmesan cheese. Stir until sauce begins to lightly thicken.
To the pan, add in your broccoli. Coat with the sauce and let soften a bit.
Add in gnocchi to the pan, and stir everything together. Immediately before placing in the oven, juice 1/2 of a lemon over the dish. Top with remaining parmesan cheese and bake for 10-15 minutes. You want the broccoli to begin to crisp up!
Top with parmesan cheese and serve!
