Sheet Pan Sausage, Onions & Peppers

Sometimes, making dinner should be the easiest thing you do all day. Our days are full of both planned, and unplanned things - sometimes they are joyful, sometimes they are not. We need a group of meals that are quick, flavorful, and easy on the clean-up. That’s where these sheet pan sausage, onions & peppers come in!

These were a staple at childhood cookouts. We’d make the sausages on the grill, and then they’d be a pan of peppers, and a pan of grilled onions. Here, we take that into one pan. And, the beauty is that the oils from the sausage that seep out during the baking process make a nice little marinade for the onions and peppers in the oven. You can use your favorite sausage - for this recipe, I’m using an andouille sausage which is seasoned with lots of herbs and has a little bit of heat. Chop up some veggies, season them, and you’ve got dinner. Pair these with Orzo Salad with Crispy Bacon & White Beans, or the Crispy Potato Salad for the perfect meal. Enjoy!

 

 

Ingredients

Italian Sausages

1 medium white onion, thinly sliced

2 bell peppers, thinly sliced

1/2 teaspoon crushed fennel

1 teaspoon garlic powder

1 teaspoon Italian seasonings

Salt & Pepper

Cook Time: 15 minutes

Total Time: 20 minutes

Recipe

  1. Preheat oven to 425 degrees and line a baking sheet with aluminum foil

  2. Thinly slice your white onion and green bell peppers and place on the baking sheet.

  3. If you’d like, cut your sausages down the middle length-wise, or in smaller pieces. For this, I cut mine down the middle length-wise - it makes for smaller portions, and helps the bottoms get nice and crispy.

  4. Over the peppers, onions, and sausages, drizzle a few tablespoons of olive oil. Then, sprinkle on 1/2 teaspoon crushed fennel, 1 teaspoon garlic powder, 1 teaspoon Italian seasonings and salt and pepper. Using your hands, or a spatula - ensure oil and seasonings are covering all onions, peppers and sausages.

  5. Place in the oven for about 15 minutes. Cooking time will vary depending on how thinly you slice the veggies, and how you cut the sausages. Be sure to check throughout the cooking process to avoid burning. '

  6. Serve with your favorite mustard and toppings. Enjoy!
