Baked Parmesan Zucchini Fries
We all need simple, healthy snacks to get us through the day. These Baked Parmesan Zucchini Fries are the perfect mid-day snack to hold you over until the next meal. Thick cuts of zucchini get rolled in an egg wash and then coated in the perfect blend of panko breadcrumbs and parmesan cheese. They are baked to perfection. Serve these with your favorite ranch dressing, marinara sauce, or whatever you’d like. Enjoy!
“What do I need?”
2 large zucchinis
1 cup panko breadcrumbs
2 ounces parmesan cheese
1 egg
“How do I make these?”
Step One: Preheat oven to 425 degrees. Wash your zucchinis and cut them into thick slices.
Step Two: In a bowl, combine your 1 cup panko breadcrumbs and 2 ounces parmesan cheese. In a separate bowl. whisk one egg to make an egg wash.
Step Three: Take a piece of your zucchini, roll it in the egg wash, and then roll it in the panko mixture until complete covered. Place on a line baking sheet. Continue this process until you work through all pieces of zucchini.
Step Four: Place zucchini fries in the oven at 425 for 20-30 minutes, or until they reach the desired crispiness you like. Cooking time will depend on the size of your zucchini. Flip the zucchini fries midway through the bake. Enjoy!
