Super Simple Strawberry Galette
I never liked strawberries as a kid. I thought they were so tart. I didn’t really like the texture or the way the little seeds got stuck in my teeth. But, I came around to them a few years ago, and there’s no looking back. They are certainly the star of this Super Simple Strawberry Galette. A galette is a fancy french-term for a flat, freeform pastry - think a flat pie with folded crust. They are super simple, extra versatile, and look like they took a really long time to make. With a store-bought pie crust, you can have dessert in 30 minutes! Enjoy!!

2-3 cups strawberries
2 tablespoons lemon juice
1/4 cup sugar + 1 teaspoon
2 tablespoons brown sugar
1 tablespoon cornstarch
2 teaspoons vanilla extract
1 egg, whisked
1 pie crust (store-bought or homemade)

How do I make this Super Simple Strawberry Galette
Step One: If you are using store-bought crust, let it thaw on the counter. If you are making your own (good for you!), follow your favorite recipe. Preheat your oven to 425 degrees.
Step Two: In a bowl, combine 2 cups cut strawberries, 2 tablespoons lemon juice, 1/4 cup sugar, 2 tablespoons brown sugar, 1 tablespoon corn starch, and 2 teaspoons vanilla. Mix everything together, and place in the refrigerator for 10-20 minutes to let the flavors come together.
Step Three: Roll out your pie crust onto a baking sheet. Place your strawberry mixture (without the juices) in the center of your piecrust leaving about 2 inches on the edges. Fold your pie crust over the strawberry mixture about two inches at a time.
Step Four: Beat your egg and wash it over the edges of your crust. Sprinkle your crust with a teaspoon of sugar.
Step Five: Bake in the oven for 15-18 minutes, or until the crust is golden brown. Top with some mint and enjoy!
