Chimichurri Potato Salad with Feta & Olives
Chimichurri is a herby-garlicky pesto-like sauce that is often served with grilled meats, but I think it goes well with most things! It’s full of parsley, fresh oregano, garlic, red pepper flakes, and some vinegar, which packs a lot of flavor into a sauce. Paired with the crispy potatoes, briny kalamata olives, and rich feta cheese, this Chimichurri Potato Salad with Feta and Olives is the side dish of all side dishes. Enjoy!
What do I need for this Chimichurri Potato Salad with Feta & Olives?
Chimichurri
1/2 cup finely chopped fresh parsley
1 tablespoon chopped fresh oregano
1/2 tablespoon minced garlic
1/4 teaspoon red pepper flakes
1/4 cup olive oil
2 tablespoons vinegar
1/4 teaspoon salt and pepper
Other Ingredients
2 pounds of creamer potatoes
Kalamata Olives
Feta Cheese
Fresh Dill
How do I make this Chimichurri Potato Salad with Feta & Olives?
Step One: Preheat your oven to 425 degrees. Cut your creamer potatoes in half, or into fourths depending on the size. Place them into a mixing bowl and drizzle over 3-4 tablespoons of olive oil, and some salt and pepper. Mix until the potatoes are fully coated. Place in the oven for 30-40 minutes, stirring every 10 minutes. Watch the potatoes closely toward the end to make sure they don’t burn!
Step Two: To make the chimichurri, in a food processor combine 1/2 cup finely chopped fresh parsley, 1 tablespoon chopped fresh oregano, 1/2 tablespoon minced garlic, 1/4 teaspoon red pepper flakes, 2 tablespoons vinegar and1/4 teaspoon salt and pepper. Pulse until all ingredients are incorporated. Then, place the mixture into 1/4 cup olive oil and let it sit on your counter until you are ready to use it. Don’t skip this step - all of those nice flavors are going to absorb into the olive oil.
Step Three: When the potatoes are done, pour them into a mixing bowl, and combine with 2-3 tablespoons of your chimichurri. Then, pour into a bowl and top with more chimichurri, some feta cheese, olives, and fresh dill. Enjoy!
