This Cucumber & Feta Pasta Salad is straight out of my Mom’s kitchen, and I added something special with this homemade Greek Dijon Vinaigrette. This dressing might be my new favorite - it’s tangy, a little spicy, packed with herbs, full of garlic and it’s a little rich from feta cheese. The thing I love most about food is how instantly it transports us back to a specific time and place. I’ve enjoyed this pasta salad at birthday celebrations, holidays and just good-old family dinners. Nothing fancy about this dish, just good flavors and good company. Enjoy!

What’s special about this Cucumber & Feta Pasta Salad?

 

This is quite a simple pasta salad that we elevate with a delicious homemade vinaigrette. You can add whatever you’ve got in the house to spruce up this pasta salad. Add some grilled chicken for a fuller meal, or some thick-cut salami for an Italian twist. The options are endless! Some tips below:

Vinaigrette: If you have a favorite greek dressing from the store, feel free to use that. But sometimes it’s fun to make your own - it’s healthier and you get a fresher flavor. If you have a mason jar, add all of your ingredients and shake it intensely. If you don’t have a container, then add everything but the olive oil into a bowl. Slowly pour in the olive oil as you are whisking to emulsify.

Pasta: I’m using penne in this pasta salad because that’s what my mom always uses. Moms know best. But, you could easily substitute whatever short pasta you’ve got!

 

What do I need for the Cucumber & Feta Pasta Salad & Dressing?

 

Greek Dijon Vinaigrette

1/3 cup olive oil

1/2 cup red wine vinegar or apple cider vinegar

1 teaspoon garlic powder

1 tablespoon minced garlic

2 teaspoons oregano

1 teaspoon basil

1 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon pepper

1 tablespoon whole grain mustard

1 tablespoon crushed feta cheese

Pasta Salad

8 ounces cooked penne pasta

4 ounces feta cheese

1 cucumber, diced

1 small red onion, diced

Olives of your choice!

Grape Tomatoes

Fresh Cilantro for Garnish

How do I make this Cucumber & Feta Pasta Salad & Dressing?

 
 
 

Step One: To make the greek dijon vinaigrette, in a mason jar with a lid, combine 1/3 cup olive oil, 1/2 cup red wine vinegar or apple cider vinegar, 1 teaspoon garlic powder, 1 tablespoon minced garlic, 2 teaspoons oregano, 1 teaspoon basil, 1 teaspoon onion powder, 1/2 teaspoon salt, 1/2 teaspoon pepper, 1 tablespoon whole-grain mustard and 1 tablespoon crushed feta cheese. Place the lid on the jar tightly and shake vigorously for 2-3 minutes. Chill for at least an hour before using.

* If you don’t have a jar with a lid, then add everything but the olive oil into a bowl. Then, slowly pour in the olive oil down the side of the bowl as you are whisking vigorously.

Step Two: Cook the pasta according to the package directions. Then, if you have time, let it cool to room temperature before using it.

Step Three: Pour your pasta into a large mixing bowl. Pour 2-3 tablespoons (or as much as you’d like) of the vinaigrette over the pasta, stir until all the pasta is lightly coated in the vinaigrette

Step Four: Top your pasta with, 4 ounces feta cheese, diced cucumber, diced red onion, olives, grape tomatoes, and parsley. Stir to combine everything as add additional vinaigrette to your tasting!
